Independence Day Teens and Food

The vegan, gluten free Springtime Strawberry Lime Crisp is baking in the oven. My husband and I will be taking it, along with his should-be-world famous corn, to our dear family friends.

Our sons are in Spain and Florida, exercising their own independence. We miss them terribly but are so happy to know they are having beautiful experiences, the eldest at a home stay with the Experiment in International Living in Valencia, the younger at a goal-keeper camp in St. Petersburg. The organizers of that camp, who coached Tim Howard here in New Jersey, had scheduled him to help run the camp. World Cup Success intervened.

This oh so awesome recipe, from the Oh She Glows blog, is the bomb. As it turns out, two of our friends' four daughters are vegetarians now and one has tummy troubles that are alleviated by avoiding gluten. I made a double batch for this for a faculty breakfast and it was gobbled up within an hour!




Oops. There goes the buzzer. Got to take the aluminum foil off.
